Cirelli Wines of Anarchy White NV is a naturally sparkling wine from Abruzzo, Italy, crafted by winemaker Francesco Cirelli. This wine is made from 100% Trebbiano grapes, farmed organically. Grapes are harvested before full maturation to retain natural acidity and fresh fruit aromatics. Whole bunches are gently pressed, and the juice undergoes spontaneous fermentation with indigenous yeasts in stainless steel tanks. A portion of the juice is kept at low temperatures to prevent fermentation, which is later added to the still wine to initiate a second fermentation in autoclave, resulting in a naturally sparkling wine. The wine is aged for several months in stainless steel tanks to preserve its fresh and vibrant character. Bottled unfined and unfiltered, with minimal sulfur addition. Vibrant gold with a slight cloudiness. Lively citrus and green apple flavors with hints of peach, complemented by delicate floral aromas of elderflower. Bone dry with lively bubbles and loads of minerality.
